What do you do if you want to indulge in something fluffy and rich before hitting the gym?
You make protein pancakes, of course! We have heard of healthy pancakes made with bananas, gluten-free pancakes made with oats and the traditional flour-milk-egg pancakes, but protein pancakes that are gluten-free, high in protein and dietary fibre? Not so much. Though it sounds complicated, all you actually need is only a few of pantry ingredients and a couple of Harmony® products which you might already have (we hope). It is incredibly easy, promise!

This does not yield sweet pancakes. You can choose to slather almond butter or jams to sweeten it, or opt for maple syrup as sweetener.

1. In a blender, add all ingredients and blend until smooth.
2. Preheat a non-stick pan over a medium heat.
3. Scoop 1/4 cup of pancake batter onto pan and let it cook.
4. Once bubble forms on batter, flip and cook the other side until brown. Repeat with the remaining batter.
5. Layer with almond butter, jam or maple syrup, and top it with blueberries.
