We use 100% real foods as ingredients and they are all listed clearly under the ingredient section. Not alien words or chemical terms, but names of real foods grown in nature, not labs. These foods, worthy to be labelled as wholefoods, are foods close to their natural form, either unprocessed or have been processed as little as possible. 

In other words, 'chufa' refers to the natural liquid extracted from raw, puréed chufa – not diluted nut milks that often rely on added sugar, binders, colourings, or flavourings to imitate the original taste.

Colloid Milling Technology

How does one access the rich minerals trapped inside the tough, jagged skin of chufa? 

Colloid milling technology operates on the rotor-stator principle, grinding materials through a narrow, fine-toothed gap between a rapidly rotating rotor and a stationary stator. The rotor and stator's teeth pierce through the hard chufa shell, crushing its flesh and releasing the nutrients within, transforming it into a rich, smooth, and fragrant purée. The liquid is then extracted by applying high-pressure compression to the purée, before being freeze-dried into fine powder.

Freeze-Drying Technology

In contrast to cheaper conventional drying methods that rely on heat, vacuum freeze-drying is a long, expensive, and highly sophisticated process. The chufa liquid is first frozen into ice in a blast-freezing chamber at -40°C within three hours, then placed under vacuum where the ice turns directly into vapour.

Such advanced technology ensures the natural taste, colour, fragrance, and nutrients (enzyme, vitamins, and minerals) of the chufa liquid are carefully preserved and sealed within. The same as drinking fresh chufa milk!
